Summer Chickpea Salad
The perfect salad for a hot summer day!
1 can garbanzo beans/chickpeas, drained
1/2 cup plain yogurt
1 T curry powder or less to taste (I used spicy!)
1/2 lemon, squeezed
Salt to taste
1/2 Red bell pepper, diced
1/4 small purple onion, diced
1/2 jalepeno, diced (or to taste, mine was MILD)
handful chopped cilantro
Blend yogurt, lemon juice, curry powder & salt together in a medium sized bowl, then add the rest of the ingredients and give it a stir to coat evenly with the dressing. Voila! Refreshingly cool (and healthy!) salad in a matter of 10 minutes. Now, I have to recommend a nice reisling or gewurztraminer for this dish - something a little sweet to counter the tart and strong taste of the salad. None of that blush Sable D’Azur, alright? :) (And yes, I know my food picture taking skills suck! ha!)
